Confetti Vegetable Dip
- 1 cup soy sour cream
- 1 Tablespoon grated Parmesan cheese
- 1 Tablespoon dry ranch-style dressing mix
- ¼ cup chopped red bell pepper
- ¼ cup chopped carrot
- ¼ cup chopped zucchini

Combine in small mixing bowl soy sour cream, Parmesan cheese and dry ranch-dressing mix. Stir in red bell pepper, carrots and zucchini. Serve with Italian Pita Chips or fresh vegetables.
