Overnight French Toast with a Twist

1 (1 pound) loaf French bread
1 (8 ounce) package soy cream cheese
8 eggs, beaten
3 cups vanilla soy beverage
½ cup granulated sugar
½ teaspoon ground cinnamon
Optional: melted margarine and maple syrup

Cut bread into 1-inch cubes. Place half of the cubed bread into a greased 13×9-inch baking dish. Using small dipper or two spoons dot soy cream cheese over bread cubes. Top with remaining bread cubes. Whisk eggs, vanilla soy beverage, sugar and cinnamon in mixing bowl; until blended. Pour mixture over bread. Cover and refrigerate overnight.

Bake uncovered at 350 degrees for 45 to 55 minutes or until knife inserted in center comes out clean. Drizzle each serving with melted margarine and maple syrup.
