Black Bean Salsa

Ingredients:

  • 1 can (15 ounces) black soybeans, rinsed and drained
  • 2 cups chopped tomatoes
  • 1 cup chopped green bell pepper
  • ½ cup chopped onion
  • ¼ cup chopped cilantro
  • 3 Tablespoons lime juice
  • 1 Tablespoon jalapeno, seeded and diced
  • ½ teaspoon salt

Directions:

  1. In mixing bowl, combine black soybeans, tomatoes, green bell pepper, onion, cilantro, lime juice, jalapeno and salt; chill.
  2. Serve with pita chips.

Makes 4 cups
