Greens With Cranberry Vinaigrette

Glazed Nuts

  • 1 egg white
  • ¼ cup sugar
  • 1 cup whole walnuts
  • ½ cup roasted soy nuts

Cranberry Vinaigrette

  • ½ cup whole-berry cranberry sauce
  • ¼ cup vegetable oil
  • 2 Tablespoons freshly squeezed orange juice
  • 2 Tablespoons balsamic vinegar
  • 8 cups mixed greens (spinach, romaine, etc.)
  • 1 medium Jonathan or red apple, cut in ½-inch pieces
  • 1 medium Granny Smith or green apple, cut in ½-inch pieces
  • ½ cup crumbled blue cheese

Combine egg white and sugar in mixing bowl; beat until frothy. Stir in walnuts and soy nuts. Spread out nut mixture on parchment-covered baking pan. Bake at 300 F, stirring every 10 minutes. Remove from oven, and let cool.

Place cranberry sauce, vegetable oil, orange juice and balsamic vinegar in container with tight-fitting lid. Shake to blend ingredients thoroughly. Place greens on serving platter; add apples and blue cheese. Drizzle with Cranberry Vinaigrette.
