Buttermilk Ranch Dressing

Ingredients:

  • 1 cup plain soy milk
  • 1 Tbsp. white vinegar
  • 1/2 cup soft silken tofu
  • 1/2 cup plain Greek yogurt
  • 1 packet ranch dressing mix (3 Tbsp.)

Directions:

  1. In a small mixing bowl, combine soy milk and vinegar. Allow to rest for 15 minutes. (This will make soy buttermilk.)
  2. In a food processor, add soy milk/vinegar mixture. Add remaining ingredients; puree until smooth.
  3. Refrigerate for at least 30 minutes. Serve with vegetables or over salad. Refrigerate in air-tight container for up to 1 week.

Makes 1 3/4 cups, serves 14
