Tropical Layered Salad

  • 4 cups torn lettuce
  • 2 cups cubed roasted chicken
  • 1 can (15 ounces) black soybeans
  • 2 cups watermelon balls
  • 2 cups fresh pineapple chunks
  • 2 cups quartered strawberries
  • 1 cup mango, peeled and chopped

Dressing

  • ⅓ cup vegetable oil
  • ⅓ cup lime juice
  • ¼ cup chopped fresh cilantro
  • 2 Tablespoons sugar, as desired
  • ¼ teaspoon salt (optional)
  • Soy nuts (optional)

Layer ingredients in 3-quart trifle bowl. Place dressing ingredients in jar with tight-fitting lid, and shake to blend. Drizzle dressing over salad right before serving. Garnish with soy nuts if desired.
