Tropical Layered Salad
- 4 cups torn lettuce
- 2 cups cubed roasted chicken
- 1 can (15 ounces) black soybeans
- 2 cups watermelon balls
- 2 cups fresh pineapple chunks
- 2 cups quartered strawberries
- 1 cup mango, peeled and chopped

Dressing
- ⅓ cup vegetable oil
- ⅓ cup lime juice
- ¼ cup chopped fresh cilantro
- 2 Tablespoons sugar, as desired
- ¼ teaspoon salt (optional)
- Soy nuts (optional)

Layer ingredients in 3-quart trifle bowl. Place dressing ingredients in jar with tight-fitting lid, and shake to blend. Drizzle dressing over salad right before serving. Garnish with soy nuts if desired.
