Soy Nut Custard

Ingredients:

  • 2 eggs, slightly beaten
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 teaspoon nutmeg
  • 1 cup soy milk
  • 5 Tablespoons roasted soy nuts, chopped in the food processor

Directions:

  1. Combine eggs, sugar, salt and vanilla in mixing bowl
  2. Warm milk in microwave for 2 minutes
  3. Add warm milk slowly to egg mixture and mix thoroughly
  4. Pour mixture into 4 ramekin bowls
  5. Put bowls in a pan and add hot water to pan
  6. Bake at 375 degrees for 20-25 minutes
  7. Let cool and then chill in the refrigerator
  8. Top with roasted soy nuts before serving
