Soy Good Cookies
  • ½ cup soy flour
  • ½ cup oat flour
  • ¾ cup quick rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sugar
  • ⅓ cup canola oil
  • ⅓ cup vanilla soy milk
  • ½ teaspoon vanilla extract
  • 1 small banana, mashed
  • ¼ cup chopped, roasted, salted soybeans
  • ½ cup semisweet chocolate chips
  1. Preheat oven to 350 F.
  2. Combine first seven ingredients (through sugar) in a bowl.
  3. Whisk together oil, soy milk, vanilla and mashed banana.
  4. Add wet mixture to dry ingredients; stir to combine.
  5. Fold in soy nuts and chocolate chips.
  6. Line a baking sheet with parchment paper.
  7. Scoop dough onto baking sheet with a cookie scoop.
  8. Bake 15–18 minutes or until golden brown, turning baking sheet halfway through.
  9. Let cool on a wire rack.
