Soy Blue Cheese Dressing

  • 6 ounces soft silken tofu
  • ¼ cup light mayonnaise
  • ¼ cup plain soy beverage
  • 2 teaspoons lemon juice
  • ½ cup blue cheese crumbles

Place silken tofu, mayonnaise, soy beverage and lemon juice in food-processor bowl. Mix until creamy. Stir in blue cheese crumbles. Refrigerate several hours to enhance flavor.

Makes 1¼ cups
