Soooy Delicious Chicken Tofu Salad

Ingredients:

  • 12 oz. shelled edamame, cooked according to package directions & cool
  • 1 cup Nasoya plantspired garlic & herb tofu cubes
  • 1 cup tofurkey plant-based chicken
  • 1 cup chopped cucumber
  • 3/4 cup diced sweet red pepper
  • 1/3 cup finely chopped onion
  • 1/2 cup mayonnaise or salad dressing
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions:

  1. Combine edamame, tofu cubes, tofurkey chicken, cucumber, red pepper and onion in a mixing bowl
  2. In a second bowl, combine the mayonnaise or salad dressing, lemon juice, salt and pepper
  3. Add dressing to other ingredients and toss gently to blend
  4. Plate it and garnish with parsley

Makes about 6 cups
