Soooy Delicious Chicken Tofu Salad
- 12 oz. shelled edamame, cooked according to package directions & cool
- 1 cup Nasoya plantspired garlic & herb tofu cubes
- 1 cup tofurkey plant-based chicken
- 1 cup chopped cucumber
- 3/4 cup diced sweet red pepper
- 1/3 cup finely chopped onion
- 1/2 cup mayonnaise or salad dressing
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions:
- Combine edamame, tofu cubes, tofurkey chicken, cucumber, red pepper and onion in a mixing bowl
- In a second bowl, combine the mayonnaise or salad dressing, lemon juice, salt and pepper
- Add dressing to other ingredients and toss gently to blend
- Plate it and garnish with parsley
