Orange Citrus Muffins
  • 2¼ cups soy-flour blend
  • ½ cup sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • ¾ cup vanilla soymilk
  • ⅓ cup vegetable oil
  • ¼ cup orange juice concentrate
  • 2 teaspoons grated orange peel
  • Coarse sugar, optional
  1. Combine in large mixing bowl dry ingredients: soy-flour blend, sugar, baking powder and salt.
  2. In second bowl, combine egg, soymilk, vegetable oil, orange juice concentrate and grated orange peel.
  3. Add liquid mixture to dry mixture, and stir until just moistened.
  4. Place batter in greased muffin tins or muffin tins with paper liners.
  5. Sprinkle sugar over each muffin.
  6. Bake at 400 F for 18–22 minutes or until wooden pick inserted comes out clean.

Makes 12 muffins
