Orange Citrus Muffins
- 2¼ cups soy-flour blend
- ½ cup sugar
- 3 teaspoons baking powder
- ¼ teaspoon salt
- 1 egg
- ¾ cup vanilla soymilk
- ⅓ cup vegetable oil
- ¼ cup orange juice concentrate
- 2 teaspoons grated orange peel
- Coarse sugar, optional

- Combine in large mixing bowl dry ingredients: soy-flour blend, sugar, baking powder and salt.
- In second bowl, combine egg, soymilk, vegetable oil, orange juice concentrate and grated orange peel.
- Add liquid mixture to dry mixture, and stir until just moistened.
- Place batter in greased muffin tins or muffin tins with paper liners.
- Sprinkle sugar over each muffin.
- Bake at 400 F for 18–22 minutes or until wooden pick inserted comes out clean.
