Ham and Vegetables in Hash Brown Crust

3 cups shredded potatoes
4 tablespoons margarine, melted
½ cup chopped onion
½ cup shredded Monterey jack cheese
4 eggs, beaten
½ cup soy sour cream
½ cup soy beverage
½ teaspoon salt
1 cup cooked ham cubes
½ cup edamame, cooked
½ cup asparagus cut into 1-inch pieces
½ cup red bell pepper

 

In medium bowl, combine potatoes, margarine, onion and cheddar cheese.  To form crust, press potato mixture onto bottom and up sides of lightly greased 9-inch deep dish pie plate.  Bake at 400 degrees for 25 minutes or until lightly brown around the edges.  Remove from oven.  While crust is baking whisk in large mixing bowl eggs; add soy sour cream, soy beverage and salt; whisk until blended.  Spread the ham, edamame, asparagus and red bell pepper on top of the baked crust.  Cover with egg mixture.  Lower oven temperature to 350 degrees and bake 25 to 30 minutes or until knife inserted near center comes out clean.   Serves 6.
