Fiesta Skillet Vegetables

4 slices bacon, cut in 1/2 pieces

2 cups fresh or frozen corn

1 cup edamame

1/2 cup chopped red onion

1/2 cup chopped green bell pepper

1 teaspoon minced garlic

1 tablespoon lime juice

1 teaspoon grated lime zest

1/4 teaspoon ground cumin

1/4 teaspoon ground chili powder

1 cup cherry tomatoes, halved

2 tablespoons chopped fresh cilantro

  1. In large skillet cook bacon until crisp; remove from skillet; leave 2 tablespoons of drippings in the pan. Add corn, edamame, onion, bell pepper and garlic to the skillet; cook until vegetables are crisp tender.
  2. Add lime juice, lime zest, cumin and chili powder. Stir in reserved bacon, cherry tomatoes and cilantro just before serving.
