Creamy Vegetable Salad

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sweet red bell pepper, sliced in 1-inch strips
  • ½ cup shredded Swiss cheese
  • ½ cup roasted soynuts
  • ½ cup ranch dressing
  • 2 tablespoons soymilk
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh rosemary, chopped

Combine broccoli, cauliflower, red bell pepper, Swiss cheese and soynuts in large bowl. In small bowl, blend ranch dressing, soymilk, chives and rosemary; combine with remaining ingredients. Serves 6
