Chocolate Sneaky Brownies
Chocolate Sneaky Brownies
  • 1 cup margarine, softened
  • 1½ cups sugar
  • 2 eggs
  • ½ cup soy sour cream
  • 1 teaspoon vanilla
  • 2½ cups soy-flour blend
  • ¼ cup baking cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups peeled, grated zucchini


Frosting

  • ⅔ cup semisweet chocolate chips
  • ½ cup creamy soynut butter

  1. Cream margarine and sugar in large bowl until light and fluffy.
  2. Add eggs separately and beat well after adding each egg.
  3. Stir in soy sour cream and vanilla.
  4. Combine dry ingredients: soy-flour blend, cocoa, baking soda and salt.
  5. Gradually add to creamed mixture.
  6. Stir in zucchini.
  7. Pour batter into a greased 13-by-9-inch baking pan.
  8. Bake at 350 F for 30–35 minutes or until wooden pick comes out clean.


Frosting

  1. Combine chocolate chips and soynut butter in small saucepan.
  2. Heat over low heat, stirring until smooth.
  3. Spread chocolate mixture over warm brownies.
  4. Cool, and cut into bars.


Makes about 1½ dozen bars
