Chocolate ‘Sneaky’ Brownies
- 1 cup margarine, softened
- 1½ cups sugar
- 2 eggs
- ½ cup soy sour cream
- 1 teaspoon vanilla
- 2½ cups soy-flour blend
- ¼ cup baking cocoa
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups peeled, grated zucchini

Frosting
- ⅔ cup semisweet chocolate chips
- ½ cup creamy soynut butter
•
- Cream margarine and sugar in large bowl until light and fluffy.
- Add eggs separately and beat well after adding each egg.
- Stir in soy sour cream and vanilla.
- Combine dry ingredients: soy-flour blend, cocoa, baking soda and salt.
- Gradually add to creamed mixture.
- Stir in zucchini.
- Pour batter into a greased 13-by-9-inch baking pan.
- Bake at 350 F for 30–35 minutes or until wooden pick comes out clean.

Frosting
- Combine chocolate chips and soynut butter in small saucepan.
- Heat over low heat, stirring until smooth.
- Spread chocolate mixture over warm brownies.
- Cool, and cut into bars.
