Cherry Cheesecake Parfait
- 1 (box of 3 ounces) cherry gelatin
- 1 cup sweet cherries pitted, chopped
- 8 ounces soy cream cheese, softened
- 1/4 cup soy sour cream
- 1/2 cup confectioner’s sugar
- 1 teaspoon vanilla
- 1 cup crushed graham crackers
Directions:
- Prepare cherry gelatin as directed on package
- Stir in sweet cherries; chill
- Combine in mixing bowl soy cream cheese, soy sour cream. confectioner’s sugar and vanilla
- Layer in parfait glass the graham crackers, soy cream cheese mixture and cherry gelatin
