Cherry Cheesecake Parfait

Ingredients:

  • 1 (box of 3 ounces) cherry gelatin
  • 1 cup sweet cherries pitted, chopped
  • 8 ounces soy cream cheese, softened
  • 1/4 cup soy sour cream
  • 1/2 cup confectioner’s sugar
  • 1 teaspoon vanilla
  • 1 cup crushed graham crackers

Directions:

  1. Prepare cherry gelatin as directed on package
  2. Stir in sweet cherries; chill
  3. Combine in mixing bowl soy cream cheese, soy sour cream. confectioner’s sugar and vanilla
  4. Layer in parfait glass the graham crackers, soy cream cheese mixture and cherry gelatin
