Calico Quinoa Salad
- 2 cups cooked quinoa, cooled
- 1 cup shelled edamame, cooked
- 1 cup cherry tomatoes, halved
- 1 cup chopped yellow bell pepper
- 1/2 cup chopped green onion
- 1/2 cup frozen peas
- 1/2 cup crumbled feta cheese
- 3/4 cup Italian dressing
Directions:
- In a mixing bowl, combine quinoa, edamame, cherry tomatoes, bell pepper, green onion, peas and feta cheese.
- Add dressing and stir to combine.
