Calico Quinoa Salad

Ingredients:

  • 2 cups cooked quinoa, cooled
  • 1 cup shelled edamame, cooked
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped yellow bell pepper
  • 1/2 cup chopped green onion
  • 1/2 cup frozen peas
  • 1/2 cup crumbled feta cheese
  • 3/4 cup Italian dressing

Directions:

  1. In a mixing bowl, combine quinoa, edamame, cherry tomatoes, bell pepper, green onion, peas and feta cheese.
  2. Add dressing and stir to combine.
