Calico Quinoa Salad
- 2 cups cooked quinoa, cooled
- 1 cup shelled edamame, cooked
- 1 cup cherry tomatoes, halved
- 1 cup chopped yellow bell pepper
- ½ cup chopped green onion
- ½ cup frozen peas
- ½ cup crumbled feta cheese
- ¾ cup Italian dressing
Combine in mixing bowl quinoa, edamame, cherry tomatoes, bell pepper, green onion, peas and feta cheese. Add dressing; stir to combine. Makes 16 servings.
