Broccoli Soy Nut Salad
- 1 bunch broccoli
- 1 head cauliflower
- 1 cup raisins
- 1 cup lightly salted soy nuts
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheese
- 3 green onions, chopped
- 1/3 cup light mayonnaise
- 1 Tbsp. sugar
- 1 pkg. (12 oz.) silken tofu, drained
- 1 tsp. lemon juice
- 1/4 tsp. Worcestershire sauce
Directions:
- Cut broccoli and cauliflower into bite-sized pieces.
- Add raisins, soy nuts, bacon, cheese and onions; mix well.
- In a blender, combine mayonnaise, sugar, tofu, lemon juice and Worcestershire sauce; blend until smooth.
- Toss vegetables and refrigerate.
