Broccoli Soy Nut Salad

Ingredients:

  • 1 bunch broccoli
  • 1 head cauliflower
  • 1 cup raisins
  • 1 cup lightly salted soy nuts
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheese
  • 3 green onions, chopped
  • 1/3 cup light mayonnaise
  • 1 Tbsp. sugar
  • 1 pkg. (12 oz.) silken tofu, drained
  • 1 tsp. lemon juice
  • 1/4 tsp. Worcestershire sauce

Directions:

  1. Cut broccoli and cauliflower into bite-sized pieces.
  2. Add raisins, soy nuts, bacon, cheese and onions; mix well.
  3. In a blender, combine mayonnaise, sugar, tofu, lemon juice and Worcestershire sauce; blend until smooth.
  4. Toss vegetables and refrigerate.
