Breakfast Tacos

Ingredients:

  • 2 strips bacon, chopped
  • 8 eggs
  • 1/2 cup soy milk
  • 1/2 cup chopped tomato
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped green onion
  • 1 avocado, cut into pieces
  • 1/2 cup soy sour cream
  • 2 Tablespoons taco seasoning
  • 8 taco shells, warmed

Directions:

  1. Cook bacon, remove all but 1 Tablespoon grease from skillet
  2. In a mixing bowl, combine eggs and soy milk; add to skillet and scramble eggs with bacon until eggs are cooked; remove from heat
  3. In a small mixing bowl, combine soy sour cream and taco seasoning
  4. Fill each taco shell with scrambled eggs, tomato, green onion, shredded cheese and avocado

Makes 8 tacos
