Breakfast Tacos
- 2 strips bacon, chopped
- 8 eggs
- 1/2 cup soy milk
- 1/2 cup chopped tomato
- 1/2 cup shredded cheddar cheese
- 1/2 cup chopped green onion
- 1 avocado, cut into pieces
- 1/2 cup soy sour cream
- 2 Tablespoons taco seasoning
- 8 taco shells, warmed
Directions:
- Cook bacon, remove all but 1 Tablespoon grease from skillet
- In a mixing bowl, combine eggs and soy milk; add to skillet and scramble eggs with bacon until eggs are cooked; remove from heat
- In a small mixing bowl, combine soy sour cream and taco seasoning
- Fill each taco shell with scrambled eggs, tomato, green onion, shredded cheese and avocado
Makes 8 tacos
