Breakfast Quiche Cups

Ingredients:

  • 2 cups all-purpose baking mix
  • 1/2 cup cornmeal
  • 1/2 cup margarine
  • 7 Tbsp. soy milk
  • 1/4 lb bulk pork sausage, crumbled and cooked
  • 4 Tbsp. chopped green onions
  • 4 Tbsp. chopped sweet bell pepper
  • 4 Tbsp. shredded Mexican cheese
  • 1 egg, beaten
  • 1/2 cup soy milk
  • 1/2 cup half and half cream
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper

Directions:

  1. In a large mixing bowl, combine baking mix and cornmeal, cut in margarine
  2. Add 7 Tbsp. soy milk and stir to make a soft dough
  3. Press about 1/4 cup dough into bottom and sides of greased muffin tins
  4. In a second mixing bowl, combine egg, 1/2 cup soy milk, half and half, salt and pepper; whisk to blend
  5. Add in sausage, green onions, bell pepper and cheese and stir
  6. Fill muffin cups with egg mixture and bake at 375 F for 25 minutes or until knife inserted in center comes out clean
