Banana Oatmeal Muffins

Ingredients: 

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup quick cooking oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup vanilla soy milk
  • 1/2 cup vegetable oil
  • 1 ripe banana mashed (1/2 cup)

Directions:

  1. In a large mixing bowl, combine flour, granulated sugar, oatmeal, baking powder, baking soda and salt
  2. Combine egg, soymilk, vegetable oil and mashed banana in a second bowl
  3. Add liquid mixture to dry mixture; stir until moistened
  4. Bake at 400 F for 15 to 18 minutes or until wooden pick inserted in muffin comes out clean
  5. Remove muffins from pan to a cooling rack

Makes 12 muffins
