Banana Oatmeal Muffins
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup quick cooking oatmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup vanilla soy milk
- 1/2 cup vegetable oil
- 1 ripe banana mashed (1/2 cup)
Directions:
- In a large mixing bowl, combine flour, granulated sugar, oatmeal, baking powder, baking soda and salt
- Combine egg, soymilk, vegetable oil and mashed banana in a second bowl
- Add liquid mixture to dry mixture; stir until moistened
- Bake at 400 F for 15 to 18 minutes or until wooden pick inserted in muffin comes out clean
- Remove muffins from pan to a cooling rack
Makes 12 muffins
