Asparagus and Ham Strata

2 cups fresh asparagus cut into 2-inch pieces
12 eggs, divided
1 ½ cups plain soy beverage
¼ teaspoon salt
6 cups French bread cubes, divided
2 cups shredded Gruyere cheese
1 package (8 oz) cooked diced ham
½ cup chopped green onion
½ cup chopped red bell pepper
2 tablespoons chopped chives

 

  1. Blanch asparagus in boiling water for 5 minutes; drain; cool in ice water; drain and set aside.
  2. Combine 4 eggs, soy beverage and salt in mixing bowl; whisk to blend; set aside.
  3. Place 4 cups bread cubes in greased 9×13-inch casserole dish.
  4. Cover bread with half of the cheese, ham, green onion, red pepper and asparagus.
  5. Pour reserved egg mixture over bread and vegetable mixture in casserole.
  6. Top with remaining 2 cups of bread, cheese, ham, green onion, red pepper and asparagus.
  7. Bake at 325 degrees for 30 minutes.
  8. Using back of dipper; press 8 indentions into casserole and fill each indention with one egg.
  9. Bake an additional 25 to 30 minutes or until mixture reaches an internal temperature of 170oF and the eggs are set. Remove from oven and let rest 10 minutes.
  10. Cut into squares. Sprinkle with additional chives if desired.
