Apple Muffins

  • 1¼ cups soy-flour blend
  • ½ cup brown sugar
  • ¼ cup ground flaxseed meal
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup grated apple
  • ⅔ cup buttermilk
  • 2 tablespoons vegetable oil
  • 1 egg, beaten
  1. Combine in large bowl soy-flour blend, brown sugar, flaxseed meal, baking powder, baking soda and salt.
  2. Stir in grated apple.
  3. Combine in medium bowl egg, buttermilk and vegetable oil.
  4. Stir liquid mixture into the dry ingredients just until moistened.
  5. Fill greased or paper-lined muffin cups two-thirds full.
  6. Bake at 375 F for 18–22 minutes until lightly brown and done when wooden pick inserted comes out clean.
