Apple Muffins
- 1¼ cups soy-flour blend
- ½ cup brown sugar
- ¼ cup ground flaxseed meal
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup grated apple
- ⅔ cup buttermilk
- 2 tablespoons vegetable oil
- 1 egg, beaten
- Combine in large bowl soy-flour blend, brown sugar, flaxseed meal, baking powder, baking soda and salt.
- Stir in grated apple.
- Combine in medium bowl egg, buttermilk and vegetable oil.
- Stir liquid mixture into the dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 375 F for 18–22 minutes until lightly brown and done when wooden pick inserted comes out clean.
