Apple Harvest w/ Chicken Salad

Ingredients:

Apple Dressing:

  • 1 container (5.3 oz.) vanilla soy yogurt
  • 1/4 cup apple juice
  • 1/4 cup unsweetened applesauce
  • 2 Tbsp. vegetable oil

Rub:

  • 1 Tbsp. brown sugar
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp dry mustard
  • 1 tsp. paprika
  • 1 Tbsp. vegetable oil
  • 1 lb boneless, skinless chicken breast (about 4)

Salad:

  • 8 cups mixed salad greens
  • 2 apple sliced, about 2 cups
  • 1/4 cup chopped red onion
  • 1/4 cup salted, dry roasted edamame
  • 1/4 cup crumbled Gorgonzola Cheese

Directions:

  1. Place dressing ingredients in container with tight fitting lid and shake to blend
  2. Combine dry rub ingredients; using a pastry brush coat chicken with vegetable oil; pat with rub and repeat on both sides of chicken
  3. Grill until desired doneness. Recommend chicken breast cook have 165F internal temperature
  4. Layer on serving plates or platter the mixed greens, sliced green chicken, sliced apples, red onion, dry roasted edamame and Gorgonzola cheese
  5. Drizzle with dressing
