Crunchy Cinnamon Coffeecake

Ingredients:

  • 3 cups protein and fiber crunch cereal, lightly crushed
  • 1 1/2 cups packed brown sugar, divided
  • 1 1/2 tsp. ground cinnamon, divided
  • 4 cups baking mix
  • 1 1/2 cups vanilla soy milk
  • 3 eggs, beaten
  • 1/4 cup vegetable oil

Optional Drizzle Ingredients:

  • 1 cup powdered sugar
  • 2 Tbsp. vanilla soy milk

Directions:

  1. In a large bowl, combine cereal, 1 cup brown sugar and 1 tsp. ground cinnamon
  2. In a second mixing bowl, combine mix from step 1, 1/2 cup brown sugar and 1/2 tsp. cinnamon
  3. Add vanilla soy milk, beaten eggs and vegetable oil; stir to blend
  4. Pour half the batter into a greased 13×9-inch baking pan
  5. Top with half of cereal mixture and then repeat with remaining batter and cereal mixture
  6. Bake at 350 degrees for 35 to 40 minutes or until wooden pick inserted comes out clean; remove from oven and let cool
  7. Combine powdered sugar and vanilla soy milk to make the drizzle if desired and drizzle over cooled coffeecake
