Crunchy Cinnamon Coffeecake
Ingredients:
- 3 cups protein and fiber crunch cereal, lightly crushed
- 1 1/2 cups packed brown sugar, divided
- 1 1/2 tsp. ground cinnamon, divided
- 4 cups baking mix
- 1 1/2 cups vanilla soy milk
- 3 eggs, beaten
- 1/4 cup vegetable oil
Optional Drizzle Ingredients:
- 1 cup powdered sugar
- 2 Tbsp. vanilla soy milk
Directions:
- In a large bowl, combine cereal, 1 cup brown sugar and 1 tsp. ground cinnamon
- In a second mixing bowl, combine mix from step 1, 1/2 cup brown sugar and 1/2 tsp. cinnamon
- Add vanilla soy milk, beaten eggs and vegetable oil; stir to blend
- Pour half the batter into a greased 13×9-inch baking pan
- Top with half of cereal mixture and then repeat with remaining batter and cereal mixture
- Bake at 350 degrees for 35 to 40 minutes or until wooden pick inserted comes out clean; remove from oven and let cool
- Combine powdered sugar and vanilla soy milk to make the drizzle if desired and drizzle over cooled coffeecake
