Double Apple French Toast Casserole

Ingredients:

  • 8 slices brioche bread, cubed
  • 1 apple, peeled and chopped
  • 4 oz. soy cream cheese, softened
  • 2 Tbsp. margarine, melted
  • 6 eggs, beaten
  • 1 cup vanilla soy milk
  • 1/2 cup maple syrup
  • 1/4 tsp. apple pie spice

Directions:

  1. Spread half of bread cubes evenly in greased 8-inch baking dish.
  2. Cover bread cubes with chopped apples.
  3. Combine in a small mixing bowl, soy cream cheese and margarine; drop by spoonful on top of apples and spread to cover.
  4. Top soy cream cheese mixture with remaining bread cubes.
  5. Combine in large mixing bowl, eggs, vanilla soy milk, maple syrup and apple pie ground spice; whisk to blend.
  6. Pour egg mixture over bread cubes. Using a spoon, press down lightly on bread cubes to coat.
  7. Bake at 350F for 45 minutes or until mixture is set in the center. Serve with additional maple syrup or Cinnamon Apple Topping.
