Double Apple French Toast Casserole
Ingredients:
- 8 slices brioche bread, cubed
- 1 apple, peeled and chopped
- 4 oz. soy cream cheese, softened
- 2 Tbsp. margarine, melted
- 6 eggs, beaten
- 1 cup vanilla soy milk
- 1/2 cup maple syrup
- 1/4 tsp. apple pie spice
Directions:
- Spread half of bread cubes evenly in greased 8-inch baking dish.
- Cover bread cubes with chopped apples.
- Combine in a small mixing bowl, soy cream cheese and margarine; drop by spoonful on top of apples and spread to cover.
- Top soy cream cheese mixture with remaining bread cubes.
- Combine in large mixing bowl, eggs, vanilla soy milk, maple syrup and apple pie ground spice; whisk to blend.
- Pour egg mixture over bread cubes. Using a spoon, press down lightly on bread cubes to coat.
- Bake at 350F for 45 minutes or until mixture is set in the center. Serve with additional maple syrup or Cinnamon Apple Topping.
