Turkey Tenderloin with Miso Apricot Preserves
- 1 1/4 lbs. turkey tenderloin*
- 3/4 cup apricot preserves
- 2 Tbsp. red miso
Directions:
- Preheat oven to 400F.
- Place tenderloin in a roasting pan lined with parchment paper, coated with nonstick spray. Season turkey tenderloins with salt and pepper.
- In a small bowl, combine the apricot preserves and miso.
- Mix well, spoon some over the turkey. Roast 35-40 minutes, until thermometer inserted into the thickest part registers at least 160F.
- Let turkey rest for 10 minutes before cutting is crosswire into 1/2 inch thick slices.
- Serve with apricot sauce.
