Soy Nut Custard
- 2 eggs, slightly beaten
- 1/2 cup granulated sugar
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla
- 1 teaspoon nutmeg
- 1 cup soy milk
- 5 Tablespoons roasted soy nuts, chopped in the food processor
Directions:
- Combine eggs, sugar, salt and vanilla in mixing bowl
- Warm milk in microwave for 2 minutes
- Add warm milk slowly to egg mixture and mix thoroughly
- Pour mixture into 4 ramekin bowls
- Put bowls in a pan and add hot water to pan
- Bake at 375 degrees for 20-25 minutes
- Let cool and then chill in the refrigerator
- Top with roasted soy nuts before serving
