Apricots Stuffed With Creamy Cheese
- 2 ounces soy cream cheese
- ½ cup crumbled blue cheese
- 24 dried apricots
- 2 Tablespoons chopped pecans
- 2 Tablespoons dried cranberries

Combine in small bowl, soy cream cheese and blue cheese. Put 2 teaspoons cheese mixture on apricot half, and top with pecans or cranberries. Refrigerate until ready to serve.
