Vanilla Confetti Popcorn
- ½ cup corn syrup
- 1 package (3.5 ounces) vanilla instant pudding
- 2 Tablespoons margarine
- 1 teaspoon vanilla
- 10 cups popped popcorn
- ½ cup roasted and salted soy nuts
- 1 Tablespoon candy sprinkles

- Preheat oven to 250 F.
- Grease 15-by-10-inch baking pan.
- In a microwave-safe, medium-size bowl, combine the corn syrup, dry pudding mix, margarine and vanilla.
- Stir until smooth.
- Place mixture in microwave for 30 seconds.
- Stir. Heat an additional 15 seconds.
- Place popcorn in large bowl and combine with soy nuts.
- Drizzle warm vanilla mixture over popcorn mixture.
- Add sprinkles and toss to coat.
- Place popcorn on prepared baking pan.
- Bake for 10 minutes.
- Stir and bake an additional 10 minutes.
- Remove from oven; cool.
- Break into pieces.
