High-Energy Breakfast Parfait
- ¼ cup honey
- 1 cup vanilla soy protein powder
- ½ cup soy nuts
- 2 (6 oz.) containers strawberry soy yogurt
- 2 cups fresh fruit (strawberries, blueberries, grapes, banana, oranges)
Preheat oven to 300°F. Place honey in microwave-safe bowl and heat in microwave just to liquefy (about 30 seconds). Add vanilla soy protein powder and soy nuts; thoroughly combine. Spread honey soy-nut mixture evenly on a nonstick baking sheet or baking sheet lined with parchment paper. Bake about 10 minutes, stirring every two minutes until lightly browned and crumbly. If the nuggets are sticky, return to the oven and bake 1 minute longer. Remove from oven and let cool completely.
Layer cooled soy-nut mixture with soy yogurt and fresh fruit in parfait serving dishes. Makes 4 servings
