Toffee Bars

Ingredients:

  • 1 cup butter, softened
  • 1 cup firmly packed brown sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 cup soy flour
  • 1/4 tsp. salt
  • 1 (4.4 oz.) bar milk chocolate, melted
  • 3/4 cup chopped pecans or soy nuts, chopped

Directions:

  1. Preheat oven to 325 degrees F
  2. In a large mixing bowl, cream butter and brown sugar until light
  3. Add egg yolk and vanilla; beat until well blended
  4. Add all-purpose flour, soy flour and salt; mix well
  5. Spread evenly in a lightly greased 10x15x2-inch pan
  6. Bake for 12 to 15 minutes (watch carefully because cookies brown quickly)
  7. Let cool for about 5 minutes
  8. Spread with melted chocolate. Sprinkle with chopped nuts and cool completely. Cut into bars.
