Summer Apricot Coffee cake

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons grated orange peel

1/2 cup margarine

2 eggs

1 cup vanilla soy milk

1 teaspoon vanilla

3 apricots, sliced

Topping:

1/3 cup brown sugar

1/4 cup all-purpose flour

2 tablespoons margarine

1 teaspoon cinnamon

  1. In a large bowl, combine sugar, baking powder, baking soda, salt and grated orange peel. 
  2. Using a pastry blender, cut in margarine.
  3. Combine eggs, soy milk and vanilla in a mixing bowl.
  4. Add liquid mixture to dry ingredients and stir just until blended.
  5. Spoon batter into 9-inch greased baking pan. Arrange fruit on top of batter.
  6. Blend topping ingredients and sprinkle over fruit.
  7. Bake at 350 degrees for 50 to 55 minutes or until wooden pick inserted comes out clean.
