Soybean Sweet Bread
- 3 eggs
- 2 cups sugar
- 1 1/3 cups vegetable oil
- 1/3 cup soy milk
- 1 (15 oz.) can Goya green pigeon peas (canned edamame), do not drain
- 1 tsp. vanilla
- 1 cup soy flour
- 2 cups all-purpose flour
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup raisins
- 3/4 cup chopped pecans
Directions:
- Combine sugar, vegetable oil, and sugar until smooth. Add soy milk, green pigeon peas and vanilla until combined.
- In a separate bowl combine soy flour, all-purpose flour, cinnamon, baking soda, baking powder and salt.
- Add dry ingredients to the wet ingredients and mix well.
- Add raisins and chopped pecans. Mix well.
- Divide mixture into two greased 9x5x3-inch loaf pans.
- Bake at 325 for 60 to 70 minutes or until wooden pick inserted comes out clean. It will come out as a dense bread.
- Serve with Soy Maple Spread
