Soybean Sweet Bread

Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1 1/3 cups vegetable oil
  • 1/3 cup soy milk
  • 1 (15 oz.) can Goya green pigeon peas (canned edamame), do not drain
  • 1 tsp. vanilla
  • 1 cup soy flour
  • 2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup raisins
  • 3/4 cup chopped pecans

Directions:

  1. Combine sugar, vegetable oil, and sugar until smooth. Add soy milk, green pigeon peas and vanilla until combined.
  2. In a separate bowl combine soy flour, all-purpose flour, cinnamon, baking soda, baking powder and salt.
  3. Add dry ingredients to the wet ingredients and mix well.
  4. Add raisins and chopped pecans. Mix well.
  5. Divide mixture into two greased 9x5x3-inch loaf pans.
  6. Bake at 325 for 60 to 70 minutes or until wooden pick inserted comes out clean. It will come out as a dense bread.
  7. Serve with Soy Maple Spread
