Soy Delightful Dessert
2 cups fresh strawberries, finely diced
1 tablespoon granulated sugar
1 package (14 ounces) firm tofu, drained, cut into cubes
2 tablespoons plain soy beverage
4 tablespoons powdered sugar
½ teaspoon lemon extract
1 cup finely ground chocolate sandwich cookie crumbs
½ cup chopped roasted and salted soy nuts
Combine diced strawberries with one tablespoon; set aside. Blend tofu in blender with soy beverage, powdered sugar, and lemon extract until smooth and creamy; set aside. Use food processor to make cookie crumbs and chopped soy nuts; chopping separately. Fill clear dessert cups with layers of cookie crumbs, strawberries and tofu mixture. Top layer a generous dollop of creamy tofu sprinkled with soy nuts. Serves 4-5.
