Soy Blessing Bread
- ¾ cup coconut oil
- ⅓ cup vegetable oil
- 1½ cups brown sugar
- ⅔ cup granulated sugar
- 3 eggs
- 1 cup mashed banana
- 1 teaspoon vanilla
- 2¼ cups all-purpose flour
- ¼ cup soy flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¾ teaspoon cinnamon
- 1½ cups mukimame (edamame)*, cooked and ground

Combine oils, sugars and eggs in large bowl. When those are creamed well, add banana and vanilla. Mix well. In a separate bowl, sift together all-purpose flour, soy flour, baking soda, baking powder and cinnamon; add to creamed mixture. Stir in edamame. Pour mixture evenly into two greased 8-by-4-inch loaf pans. Bake at 350 F for 50–60 minutes.
