Soy Biscuits

  • 2 cups soy-flour blend
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1½ tablespoons sugar
  • ½ teaspoon cream of tarter
  • ¼ teaspoon salt
  • ½ cup margarine or shortening
  • ⅔ cup soymilk

Preheat oven to 450 F. Thoroughly combine soy-flour blend, baking powder, sugar, cream of tartar and salt. Cut in margarine or shortening until coarsely mixed. Add optional ingredient*. Add soymilk and mix to form a soft dough. Place dough on lightly floured surface and gently knead dough until a smooth ball. Pat or roll to ¾-inch thickness. Cut with a 2½ biscuit cutter or drop on ungreased baking sheet about 1 inch apart. Bake at 450 F for 10–12 minutes or until golden brown. Remove immediately from baking sheet.

Makes 8 biscuits

* Optional ingredients for biscuit variations:
Bacon biscuits: ⅓ cup crumbled cooked bacon
Cheese biscuits: ½ cup grated cheddar cheese
Chive biscuits: 3 tablespoons chopped chives
