Red and White Cookies

Ingredients:

  • 10 Tablespoons margarine, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup soy sour cream
  • red food coloring, as desired
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Icing:

  • 2 1/2 cups confectioner’s sugar
  • 2 Tablespoons light corn syrup
  • 3-4 Tablespoons hot water
  • 1 teaspoon vanilla extract
  • red food coloring, as desired
  • red and white coarse decorating sugar

Directions:

  1. Combine margarine and granulated sugar in a mixing bowl; beat until light and fluffy
  2. Add eggs one at a time and mix until blended
  3. Add vanilla and soy sour cream; blend well then add red food coloring as desired
  4. In a second bowl, combine flour, baking powder, baking soda and salt
  5. Gradually add to creamed mixture; refrigerate for about 1 hour
  6. Roll 2 Tablespoons of dough into a ball and place on parchment covered baking sheet; press to flatten slightly
  7. Bake at 350 degrees for 12 to 15 minutes until beginning to brown
  8. Combine confectioner’s sugar, light corn syrup and gradually add hot water for desired consistency in a mixing bowl
  9. Add vanilla extract; mix well
  10. Divide icing into two bowls. Add red food coloring to one bow for desired color. Spread icing half-way with white glaze then sprinkle with white decorating sugar. Set on cooling rack to set for 15 to 20 minutes then repeat the process with red glaze on the other half of cookie and sprinkle with red decorating sugar

Makes 2 1/2 dozen cookies
