Raisin Bars
  • 1 cup raisins
  • 2 cups water
  • 1 cup granulated sugar
  • ½ cup shortening
  • 1 cup soy flour
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Preheat oven to 350 F. Combine raisins and water in sauce pan; simmer about 15 minutes until 1 cup of liquid remains; set aside to cool. Cream sugar and shortening in mixing bowl. Sift soy flour, all-purpose flour, baking soda, cinnamon and salt. Alternately add the dry ingredients and raisin mixture to the creamed mixture. Pour mixture into greased 8½-by-12-inch pan. Bake 20–25 minutes or until wooden pick inserted in center comes out clean. If desired, spread with frosting while warm.

Makes 2 dozen bars

Frosting

  • 2 cups powdered sugar
  • 2 Tablespoons milk
  • 1 Tablespoon butter, melted
  • ¼ teaspoon vanilla

Blend all ingredients in small mixing bowl until smooth and creamy.
