Quick Chocolate Peppermint Pie

Ingredients:

  • 1 (14 oz) extra firm tofu
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup soy milk
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 chocolate graham cracker pie crust
  • 1/4 to 1/2 cup crushed peppermint candy canes for garnish
  • whipped cream (for ease of preparation, use cool whip)

Directions:

  1. Microwave the chocolate chips for 40 seconds and mix until smooth
  2. Put the chocolate, tofu, milk, vanilla and peppermint extracts in blender or food processor and blend until creamy
  3. Put in the prepared crust and refrigerate for at least 1 hour
  4. Serve immediately or it can set for several days in the refrigerator covered with plastic wrap
  5. Optional: When ready to serve, top with whipped cream and sprinkle with crushed peppermint
