Quick Chocolate Peppermint Pie
- 1 (14 oz) extra firm tofu
- 1 cup semi-sweet chocolate chips
- 1/4 cup soy milk
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- 1 chocolate graham cracker pie crust
- 1/4 to 1/2 cup crushed peppermint candy canes for garnish
- whipped cream (for ease of preparation, use cool whip)
Directions:
- Microwave the chocolate chips for 40 seconds and mix until smooth
- Put the chocolate, tofu, milk, vanilla and peppermint extracts in blender or food processor and blend until creamy
- Put in the prepared crust and refrigerate for at least 1 hour
- Serve immediately or it can set for several days in the refrigerator covered with plastic wrap
- Optional: When ready to serve, top with whipped cream and sprinkle with crushed peppermint
