Pumpkin Muffins

Ingredients:

  • 2 1/2 cups soy-flour blend
  • 1 cup brown sugar
  • 1 Tbsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 1 cup canned pumpkin
  • 3/4 cup vanilla soy milk
  • 2 eggs
  • 6 Tbsp. margarine, melted
  • 1/2 cup raisins (optional)

Directions:

  1. Combine soy-flour blend, brown sugar, baking powder, pumpkin pie spice and salt in a large bowl
  2. In a second bowl, combine pumpkin, soy milk, eggs and melted margarine; add to dry ingredients
  3. Blend until all ingredients are moistened
  4. Stir in raisins; portion batter into paper-lined muffin pan
  5. Bake at 400 for 18-20 minutes or until golden brown and wooden pick inserted in muffin comes out clean
