Pumpkin Biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup margarine, cold, sliced
  • 1/2 cup pureed pumpkin
  • 1/4 cup vanilla soy milk

Directions:

  1. In a mixing bowl combine all-purpose flour, baking powder, sugar and salt; whisk together
  2. Add margarine and cut-in with pastry blender to make coarse crumbs
  3. In a small bowl combine the pumpkin and soy milk; add to flour mixture and stir to form dough
  4. Knead on lightly floured board; roll to 1-inch thickness and cut biscuits using a 2-inch round
  5. Place biscuits on baking sheet; bake at 400 degrees for 15 to 20 minutes until browned.
