Peanut Butter Chocolate Chip Cookies

 

½ cup
margarine, softened
½ cup creamy peanut butter
½ cup sugar
½ cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/3 cups soy flour blend
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups chocolate pieces 

In a large mixing bowl, cream margarine, peanut butter and both
sugars; add  eggs and vanilla; blend until smooth.  Combine soy flour blend,
baking soda and salt in small bowl; add to creamed mixture and mix well.  Stir
in chocolate pieces.   Drop by tablespoon on greased baking sheet.  Bake at 350
degrees for 9 to 12 minutes.  Let cool slightly then remove to cooling rack. 
Makes about 3 ½ dozen cookies.
